Dilled Potato Salad with Feta Cheese

Ingredients

  1. 2 lbsmall red potatoes, unpeeled
  2. 1/3 cupred wine vinegar
  3. 1/3 cupvegetable oil
  4. 3 tbspchopped fresh dill (or 1 Tablespoon dried)
  5. 1/2 tspyou could add up to 1 teaspoon depending on taste.
  6. 1 largered bell pepper chopped
  7. 1cucumber cut in half length wise, then sliced
  8. 1/2 cupsliced green onions
  9. 14oz. package of crumbled feta cheese

Cooking Instructions

  1. 1

    Boil potatoes for 25 ~ 30 minutes (or just until tender), drain and cool. Cut potatoes into quarters.

    Wisk together vinegar, oil, dill, salt and pepper. Pour over warm potatoes.

    Stir in 1 chopped bell peppers, cucumber and green onions. Add the feta cheese and toss to combine.

    Cover and chill for at least 2 hours.
