Ingredients

  1. 2 cflour
  2. 1 csugar
  3. 2 tspbaking powder
  4. 1/2 tspbaking soda
  5. 1/2 tspsalt
  6. 2 tspvanilla extract
  7. 1 coil
  8. 2 cgrated carrots
  9. 3eggs
  10. 2 tspground cinnamon

Cooking Instructions

    Preheat your oven to 175°c. Grease and flour your baking dish

  2. 2

    In a bowl sift the flour, salt, baking powder, baking soda and cinnamon. Mix well and set aside

    In a separate bowl, whisk sugar, oil, vanilla and eggs until well combined

  4. 4

    Mix your dry ingredients with wet ingredients

  5. 5

    Fold in the carrots

  6. 6

    Pour the batter into the prepared tin and bake for 40-50mins (I used my charcoal jiko)

  7. 7

    Let it cool in the tin for 10mins then turn on a wire rack to cool completely. Enjoy
