Ingredients

  1. 140 gnoodles (2 small packs)
  2. 2 tablespoonspalm oil
  3. 1Boiled egg
  4. 1medium sized onion
  5. 2-3medium-sized peppers (scotch bonnet)
  6. 1medium sized carrot
  7. 1/4 tspginger and garlic powder
  8. 2 teaspoonsNoodle seasoning(or to taste)
  9. 2medium sized firmly ripe plantain
  10. 1 cupvegetable oil (for frying the plantain)
  11. Salt (to taste)

Cooking Instructions

    Steam noodles in a cup of boiling water for 2minutes, strain, and set aside

  2. 2

    Chop up the onion, Pepper and carrots and also chop up the boiled egg

  3. 3

    Peel and slice your plantain thinly in long strips, add a pinch of salt and fry, then remove from the oil when done and set aside

  4. 4

    Place your saucepan over medium heat, add in the palm oil to heat up (don't bleach)

  5. 5

    Add in the chopped onion and stir fry, then add in the remaining chopped ingredients. Stir fry for about 30 seconds

  6. 6

    Add in the noodles then the ginger/garlic powder and the noodles seasoning. Top up with 2 tablespoons of warm water and stir thoroughly to evenly mix(be careful not to mash it)

  7. 7

    Allow simmer for another 30secs and remove from cooking heat.

  8. 8

    Fold the fried plantain into 2 & string onto a kebab stick for serving

  9. 9

    Serve noodles warm with the plantain kebab (recipe takes approximately 10minutes to prepare)
