Apple & Chilli Chutney

Ingredients

Serves 40 people
  1. 12cooking apples - peeled, cored and finely chopped
  2. 1red pepper - finely chopped
  3. 1onion - chopped
  4. 2-4grated fresh root ginger
  5. 2 teaspoonsminced garlic
  6. 300 mlcider vinegar
  7. 200 gramsdark soft sugar
  8. 100 gramscaster sugar
  9. 1/2 teaspoonground cardamom
  10. 1/4 teaspoonground nutmeg
  11. 1/4 teaspoonground cloves

Cooking Instructions

    Combine all ingredients into a saucepan then bring to the boil, reduce heat and cover with a lid.

    Simmer for an hour stirring frequently until the apples are tender and the chutney is thickened.

    Mix with water if necessary to keep the ingredients moist.

    Ladle hot chutney into sterilised jars and seal, or allow cool and store in the fridge until ready to serve.
