Rhubarb and almond bircher muesli

A Greek-inspired muesli with added rhubarb for that wonderful colour. You'll need to soak the oats overnight. Rhubarb can be overpriced in our supermarkets. Best to buy from your local greengrocers or farmers' market, or hopefully know someone growing there own. This is super easy. You may find there are too many flavours, so simply leave out what you don't fancy!

Ingredients

4 servings
  1. 200 grhubarb, cut into chunks
  2. 3 tbsprunny honey
  3. 120 mlfresh orange juice
  4. 2 tbsprose water
  5. 120 grolled oats
  6. 1 tspground cinnamon
  7. 250 gGreek yoghurt, plus extra to serve
  8. 50 gtoasted flaked almonds

Cooking Instructions

    Pop the rhubarb, honey and orange juice into a large saucepan. Poach gently for 10 minutes, the rhubarb should be just softened. Cool and drain the cooking liquid, and then add the rose water.

    Mix the cooking liquid with the oats, yoghurt, cinnamon, half the rhubarb and half the almonds.

    Stir together and leave in the fridge overnight, letting the oats soak.

    Enjoy the muesli finished off with the remaining rhubarb, almonds, more Greek yoghurt, and a drizzle of honey
