Traditionally eaten for breakfast, nasi goreng is an Indonesian classic and is amazingly versatile - it’s like pizza to the Italians.
Cooking Instructions

Cook the long grain rice. Let it cool and and put aside.

For the spice paste, blend all of the spice ingredients together using mortar and pestle or chopper or food processor. Set aside.

For the stir fry, heat the oil in a wok over a high heat until shimmering hot then add the beaten eggs, make it like a scrambled eggs and set aside. Using the remaining oil in the wok, add the chicken and fry for a minute or so, then add the spice paste and the scrambled eggs and stir well, cooking for 4-5 minutes.

Add the cooked rice and stir until its all been incorporated. Season with sweet soy sauce and chicken stock powder, to taste.

Heat a little of oil in frying pan over a medium heat and fry the egg and cooked to your liking.

To serve, put the rice in a plate, place the cucumber, tomatoes and crackers on the side of the rice, then place the egg on top, sprinkle with chopped spring onion and crispy shallots.

The Indonesian food that I had for lunch today wasn't nasi goreng, but it reminded me of it. This came out so much better than that dish that I had at an Indonesian restaurant ages ago!Taste the spicy pepper before cooking it. If it's not spicy, then the dish won't be spicy. Many years ago I worked with an ex royal marine who had traveled the world and we discovered that we had a common interest in food and he told me that on board ship the chef would save whatever meat or bacon or sausage was left over each day and on a friday would use it up with rice and make a what he called a nasigoren, I made this many times over the years and later discovered it was based on a nasi goreng which the chef probably came across in Indonesia, so here is my version and in tribute to scouse my old colleague from my time with the navy.Thesingingchef
