Mix all spices except dry ginger powder, salt, black salt and amchoor powder. Roast these mixed spices together on a pan over low heat for 2 mins. Remove the spices to a plate and allow to cool. Now crush the mixture to make powder and take out into a bowl and add salt, black salt, ginger powder and amchoor powder mix it well.

Now, add water to the poha, wash lightly by hand, and strain the water. Then add a little turmeric, a little salt, sugar and mix lightly.

Then, heat the oil in a pan, add the peanuts and saut until the color starts to change. Then add mustard seeds, cumin, onion, fennel and green chillies. Saute onion on high flame for one more minute.

Then, add turmeric and add 1/2 cup water. Once the water boils, add a little sugar, poha and mix lightly. Then cover the poha and let it rise for 2 minutes.

Now, add lemon juice, coriander and jeeravan masala and mix well.

So, Indori Poha is ready to serve. Garnish with ratlami save, pomegranate, onion, coriander, lemon and serve.
