Ingredients

8-9 muffins
  1. 1 cupwheat flour
  2. 1 tspbaking powder
  3. 1/2 tspbaking soda
  4. 1/4 tspcinnamon powder
  5. 1 pinchsalt
  6. 1/4 cupchoco chips
  7. 3/4th cup jaggery powder
  8. 1/3 cupyoghurt
  9. 1/3 cuprefined oil
  10. 2-3medium-sized overripe banana
  11. 1 tspvanilla essence

    Gather all the ingredients needed for muffins before hand. preheat oven or microwave at 180 degrees.

    In a bowl take wheat flour, baking powder, baking soda, cinnamon and salt. sieve these dry ingredients 2-3 times and keep aside.

    In a separate bowl take banana. cut and mash it into puree. Now add jaggery into it and mix it well till it becomes a smooth puree. Add curd, oil and vanilla essence and mix further.

    Now add flour slowly into 2-3 batches and mix into the puree by cut and fold method. make sure not to over beat the mixture. Add few choco chips into the mixture.

    Pour this mixture into muffin mould and bake it for about 18-20 minutes. once cupcakes are ready check it with the help of a toothpick.
