Airfried Thekua

Thekua is sweet savoury fried snack of Bihar, Jharkhand,West Bengal. It's made from wheat flour, dessicated coconut, jaggery- milk syrup, cardamom and snauf,ghee.
It's a revered prasada (offered to God), during chhath puja.
Usually it's made by deep frying.
I innovated by baking in Airfryer.

Cooking Instructions

Melt jaggery in milk on slow flame. Keep aside.

In mixing bowl add wheat flour, dessicated coconut, cardamom powder,snauf, almond flakes. Mix well. Add ghee and make crumble like mixture.

Add jaggery- milk mixture and bind into semi soft dough.

Knead dough again and make 10-12 equal portions. Give shape of leaf to each and with the help of toothpick make design on it as shown.

Place in preheated Airfryer mesh. Bake in Airfryer for 15-17 minutes at 180 temperature..till crispy golden brown.

Relish/ Serve Delicious Airfried Thekua at tea time.

It's a "South Indian" tea time snack & it's easy to make. It's stuffed with green gram. Some add coconut to the gram, but I like it better this way. Make sure the gram mix is not too watery or loose. Otherwise it will come apart while dipping in the batter. You can avoid the cardamom powder if you don't like it. Add only a little water while melting the jaggery. Pen Friend
