Ingredients

30 minutes
4 servings
  1. 2parsnips cut to chunks
  2. 3carrots cut to chunks
  3. 450 g (1 lb)frozen peas
  4. 2gloves of garlic, crushed
  5. salt & pepper
  6. 4 tbsoil
  7. 1 tbsflour
  8. 1 tsppaprika
  9. 1 l (2 pint)chicken stock
  10. 100 gsliced pepperoni

Cooking Instructions

    In a large saucepan saute carrots, parsnips and garlic in 1 tbs of oil (for about 7 minutes). Add peas and stock and simmer until vegetables are almost cooked (20 minutes).

    In the meantime fry 1 tbs of flour in oil until golden brown. Take it off heat and sprinkle with paprika. Add a little soup or water stir quickly and pour it into the soup. Let it simmer for a further 5 minutes.

    Enhance your soup with a handful of dry broken vermicelli (which is very fine, long strands of pasta).

    Serve with fried pepperoni slices and enjoy your soup with a slice of home baked bread.
