Dates and Tamarind Chutney with Jaggery

A sweet and sour Chutney that actually spruces up almost all the chaats in our country. It is a must have one that adds an extra zing to different chaats and snacks. The best part is that it can be stored in the refrigerator and used for a long time upto 2 months or more. I usually make both the versions, first one with Jaggery and the second one with Sugar. The process remains the same for both.
In this particular one, I have used Jaggery. It's a perfect accompaniment to various Chaats, Dahi Bhallas, Pakoras etc. It's also an excellent Dip for many a delightful Snacks. The uses are many and the list is endless. You just go on and on with this amazing Chutney.
A little tangy and a bit sour, it's just right for many an occasions.

Ingredients

20-25 minutes
15-20 servings
  1. 1 cuppitted Dates
  2. 1/4 cupTamarind seedless
  3. 1 tbspCumin powder roasted
  4. 1 tbspRed Chilli powder
  5. 1 tspSalt
  6. 1/2 cupJaggery
  7. 1 tspDry Ginger powder or Saunth

Cooking Instructions

20-25 minutes

    Add tamarind and dates to a pan along with water. Also add the rest of the ingredients except jaggery. Meanwhile melt jaggery adding a little water on a medium high heat. Keep an eye on it as it is being on the gas.

    Simmer on a medium high heat. After the mix softens in about 10 minutes, add melted jaggery and mix well.

    Let it cool down a bit. Blend into a smooth semi solid paste. Store it in airtight containers and refrigerate for the later use.

    Use it according to taste and preference. Make it thin by adding little water whenever you need a thinner consistency Chutney. It's best if it's kept in the freezer if you have made it in larger quantities. Take out some and use as required. Keep a major part of it in the freezer only in such cases. And always use glass bottles or canisters for storing it. Enjoy!
