Rajma rice is very popular food in north India. It is very easy to make .
Cooking Instructions

First wash & soak rajma for 4 - 5 hours or overnight. Now take rajma in a cooker & add salt to it. Cook it for 4 - 5 whistles at low flame or till rajma becomes soft.

Now take onion, tomato, ginger & green chillies in a blender & make a smooth puree of it.

Now heat ghee in a pan. Add cumin seeds, asefoetida, bay leaf, cloves to it. Now add tomato puree to it. Add all spices as mentioned. Cook it for 5 min till oil releases from the corner. Add rajma to it. Garnish with coriander & paneer cubes. Serve it with steamed rice & salad.

Recently summoned the courage to experiment with Indian spices and was pleased that the results were pretty tasty. I didn't strictly measure ingredients, sorry, so these are my best estimates (YMMV). Very easy to make, too, which is a huge plus. I served it with an improvised mixed raita of Greek yogurt, green onions, tomato, and mint, plus a frozen paratha that I revived in butter.

There are obviously many versions to this dish, where yoghurt or poppy seeds are also added according to individual preference.
