Easy Salsa

I love taco rice with salsa, so I made some at home.
If you don't like green peppers, you can omit them. If you use only 1 teaspoon of Tabasco, kids can probably still eat it too.
For kids, cut the vegetables very fine so that they can easily eat it. Recipe by Tamutarou

Cooking Instructions

Mince the onion, green pepper and parsley. Grate the garlic. Sprinkle salt on the onions and green peppers and let sit for 15 minutes.

Combine everything together.

It's ready.

It's great over taco rice.

I suppose it would be easier to put the tomatoes, bell pepper, etc. to a food processor and pulse for a few seconds. But since I don't have one, I have to do it the old-fashioned way--slice and dice them manually! I call this quick salsa because I just slice and dice vegetables that I found in my fridge. This salsa is super quick and very cheap to make. I didn't want to drag out my blender, so I used my smoothie maker and it worked great. Don't keep it on to long or you will have Mexican flavored tomato sauce. My kids love this stuff!
