Simple Tomato Chutney

This is basically a blended Tomato Chutney with Tadka. And is slightly different from the routine one's. In this we first cook Tomatoes until soft and mushy and the raw smell completely gone. And then it is blended and tempered generously. That's it. It's a lovely looking Chutney as well as yummy in taste too. This is a simple everyday Chutney that I make almost every Week. And sometimes twice a Week and relish it with Tala huwa Gosht and Tala huwa Keema as well as Hyderabadi Khichdi too. So it's basically a multipurpose one.
Not only the main meals, this can even be enjoyed along with Dosas, Idlis, Uttappams, Upma etc.
Tastes great and is done easily too. The spices can be adjusted accordingly. Ripe Tomatoes make the job even easier and it does not require a drop of water whatsoever. However Oil can be used accordingly.

Cooking Instructions

Wash all the Tomatoes, pat dry and chop fine. In a pot, heat Oil and add the chopped Garlic and Coriander Seeds. Also add a little Asafoetida. After half a minute of frying, add the Tomatoes, Green Chillies and Coriander Leaves as well. Cover and cook on a medium high to high heat. Keep checking and stirring in between. After about 15-20 minutes, the Tomatoes would have become tender and even the raw smell is gone. Cook until the water almost dries.

Now add the Red Chilli powder and Salt. Allow it to cool down a bit. Mix well and blend it. Keep it back on the stove. And finally, add the tempering and mix. The quick and easy Chutney is all ready for your daily meals alongside Poppadums, Homemade Badiyan or Wadiyan etc.

This stays fresh upto 20 days in the refrigerator and upto two months in the freezer. Serve with meals or any of your favourite Breakfast items like Idlis, Dosas, Uttappams etc.
