Ingredients

  1. For Caramel Condensed Milk
  2. 1 1/2 litersMilk -
  3. 1 tspGhee -
  4. 2/3 cupSugar -
  5. For Modak
  6. 1 1/2 cupsWheat flour
  7. 1/2 cupSemolina
  8. 100 gramsEdible Gum
  9. 2/3 cupGhee
  10. 20Almonds
  11. 2 tbspMelon seeds
  12. 2 tbspPoppy seeds
  13. 20Cashews
  14. For Stuffing
  15. 1/4 cupRoasted Walnuts (finely chopped)
  16. 2 cupsApples (finely chopped)
  17. 1/4 tspCinnamon
  18. 3 tbspJaggery
  19. 1 tbspGhee

Cooking Instructions

    For Caramel Condensed Milk

    First of all take a heavy bottom pan. Apply 1 tsp ghee on the pan. Add milk and sugar to it. Boil the milk on high flame,

    Stirring occasionally, when the milk starts to thicken. Then add baking soda and keep stirring continuously. A lot of foam will appear at this time so keep stirring it continuously.

    In 7 to 8 minutes, the foam will start to end and its color will become golden. Caramel Condensed Milk is ready.

    For Laddu
    Take a large and thick bottomed pan. Add 1/2 cup ghee to it. When the ghee is hot, add gum and fry it. When the gum swells, take it out from the ghee with the help of a spoon.

    Now put ghee an In the same pan, roast almonds and cashews.
    Make a paste by
    adding cashew nuts, almonds and gum in a mixer jar

    Add flour and semolina in the same pan and fry it on low flame. Keep stirring it from time to time.

    Add caramel condensed milk and mix. Then add poppy seeds and melon seeds and mix well. Add the gum mixture to it. Now mix all the ingredients well. Let the mixture cool down.

    For Stuffing
    Peel the apple and grated it. Heat ghee in a pan. Add apple, nutmeg, cinnamon, salt and jaggery to it, mix and cook covered for some time. Saute the apples until soft, then add the roasted walnuts. Mix well. Let it cool down.

    How to make Stuffed Modak
    Fill the mold with the flour mixture and press well to make a cavity in the center. Now fill the apple mixture in it and cover it with the flour mixture. Take the modak out of the mould.
