Cooking Instructions

In a bowl add all the dry ingredients of refined flour, sooji, rice flour, sugar and salt. Mix well.

Add milk slowly and make a semi thick batter. Cover for 2 hours

For the filling - in a pan add grated coconut, sugar, Khoya and mix. Turn on the flame to low and stir until sugar is dissolved. Should take 6-7 mins

Add milk and ghee and mix well. Keep stirring until the mix is thickened. Add green cardamom powder. Mix

Set aside and add to a plate and spread to cool

In a pan smear with ghee and add a ladle of the batter, spread evenly and add a Tbsp of the filling on one side, roll till the other side. Press a little and set aside. Complete the batches

Plate with Gur and enjoy or enjoy on its own

It is traditional Indonesian snack, steamed glutinous rice flour with sweet grated coconut filling wrapped in banana leaves.Sweet grated coconut is made from fresh young grated coconut, some water and palm sugar, cook it over low heat, stirring often until the liquid is almost evaporated, and continue cooking until there is no liquid left. Remove from the heat and let the mixture set until it is cool enough to handle.The original kue is made from white glutinous rice flour with coconut milk. But I like to add my kue koci with black glutinous rice (soak the rice over night and blend it smoothly with some coconut milk) or steamed and mashed pumpkin or sweet potato or yam. Wiwik Sunariyah
