Cooking Instructions

Soak the rice in enough water for minimum 5hrs.

Grind together the soaked rice & grated coconut with a little water to make a smooth paste. let it ferment in a warm place(the consistency of the batter should be watery).

Add salt & sugar- note we do not add salt in the previous stage because it would demote the fermentation process.Check for the consistency,if the batter is too thick then add required amount of water.

Heat the kadai/skillet. Brush little ghee.

After the kadai is heated scoop a ladle full of the mixture & pour in the centre.

Cover the kadai/frying pan with a lid. Cover the side of the lid with a wet cloth.

Cook it in a low medium flame. After few minutes remove it from flame, no need to flip the upper portion of the pitha/pancake.

Enjoy this odiya delicacy with any curry of your choice.

I recommend this recipe to people on macrobiotic diets or children with allergies because it doesn't use eggs or milk.Please adjust the amount of soy milk according to the rice flour, because the amount of moisture absorbed depends on the type of rice flour you have. You can cook these just like regular pancakes. The kabocha powder is for color and may be omitted. We don't have honey or syrup around, so these pancakes are relatively sweet on their own.
