Ajwain Laccha Paratha

A delicious multi-layered whole wheat flat bread/paratha made with ajwain is a very popular paratha in North Indian cuisine. Make a try for this paratha and enjoy your meal. It tastes great with any Indian curry as the main dish, it is a treat with any meal and can be served with any gravy based dish of your choice. A crispy paratha, tricky to make but very tasty.

Cooking Instructions

Take two cups of whole wheat flour in a mixing bowl.

Add salt and sugar. Pour water and mix well, knead the dough for ten minutes and make a firm soft dough.

Scoop the dough into small tennis ball size portions. Keep the laccha paratha dough balls covered with a wet cotton cloth for 15 to 20 minutes aside.

Roll the dough as thin as possible and apply ghee or oil and spread fully.

Here starts the tricky part, fold the roti like a fan till you reach the end, now hold from the two opposite ends, and tap the dough on the counter to stretch the roti. smear some ajwain seeds on the top.

Cover and keep in the fridge for 20 minutes.

Heat the tawa on medium flame add 1 tbsp ghee and place the paratha to cook for 1-2 minutes and flip.

Add another 1 tbsp ghee/butter and cook till golden brown (use additional ghee/butter if required) cook for further 2-3 minutes.

Repeat the same process with all remaining dough balls.

Laccha paratha is ready to be served.
