Ingredients

  • 2 cupWhole wheat flour
  • 1/2 cupRefined flour(Optional)
  • 1/4 cupRice flour (to make parathas crispy)
  • 1 tbspOlive oil or Ghee
  • 1 tspRock Salt (As per taste)
  • as neededWater (To knead the dough)
  • Ingredients for stuffing
  • 500 gramHomemade crumbled paneer (You can use tofu as well)
  • 1/2 cupPeas (Boiled)
  • 1/2 cupOnion (Finely chopped)
  • 1/2 cupCarrot (Finely chopped)
  • 3/4 cupBell pepper (Green & Red) (Finely chopped)
  • 1/2 tspFresh Ginger paste
  • 1 tspRock Salt (For stuffing)
  • 1/2 cupFresh coriander leaves (Finely Chopped)
  • 2-3Fresh green chillies(Finely Chopped)
  • as neededCooking oil (For paratha)
  • Spices for stuffing
  • 1 tspCoriander seeds
  • 2Cardamom (Elaichi) Pods
  • 2 Cloves(Laung)
  • 3Whole Black Peppercorns
  • 4-5Dry red chilles
  • 1 TspCarom seeds(Ajwain)
  • 1Cinnamon stick

Steps

  1. 1

    For the dough: mix all the ingredients mentioned under dough section and add water to make a soft and smooth dough.

  2. 2

    Keep it aside by greasing oil & covering using a cloth.

  3. 3

    Dry Roast Spices mentioned under "Spices for stuffing" section till the aroma wafts in air & grind into powder.

  4. 4

    Heat oil, add onion once golden brown add other veggies,spices & cook properly. Let it cool down on room temperature.

  5. 5

    Roll the dough, fill the stuffing in centre. Carefully fold the sides to give it square shape.

  6. 6

    Shallow fry in oil or butter from both sides till golden brown.

  7. 7

    Serve with homemade tomato-onion chutney & coriander-mint chutney.
