Easy, Quick, Healthy and Delicious Aviyal/Avial recipe made with mixed vegetables, coconut and curd. Serve it with hot steamed rice or as a side dish for any Adai recipe.
Cooking Instructions

Firstly, In a mixer jar add the freshly grated coconut.

To it, add green chilies and cumin seeds along with little water and grind to a thick paste.

In a pan add all the chopped vegetables mentioned above along with curry leaves, turmeric powder and water enough to cover the vegetables. Cook on medium flame till the vegetables turn soft.

Once the vegetables are cooked lower the flame and add the prepared coconut paste and cook till it comes to a boil.

Add salt and mix it well.

Remove from heat and add whisked curd. Mix it quickly.

Now for the tempering: In a small tadka pan heat coconut oil. Add mustard seeds and cumin seeds. After it splutters add the curry leaves. Add this tempering into the prepared aviyal.

Mix it well and transfer to a serving bowl.

Delicious Aviyal is ready. Serve it with hot steamed rice or as a side dish for Adai.
