Cooking Instructions

Chopped vegetables set aside.
Crumble paneer.
Boiled potatoes mashed set aside. - 2
Take onion, tomato, ginger, garlic, cashew nuts, and water in a pan, turn the heat on medium.

Take grated paneer, boiled, mashed
potatoes, corn flour, garam masala,
cashews and salt in a bowl.
Mix well using hand, it should come together like a dough. - 4
Divide the dough equal portion and make smooth small balls.
Heat appe (paniyaram) pan on medium heat. Add around 1 teaspoon of oil to each section. Once hot place kofta.

Once they get golden brown from the bottom side then flip them and cookanother side. If needed you can add few more drops of oil.
Similarly, fry the sides as well to get even browning from all the sides.
Once they get golden brown from all the sides then remove it on a plate and keep it aside. - 6
Let it simmer for 15 minutes or until onion tomatoes get soft. Let it cool down a bit.Then take this mixture into the blender jar.Blend into a smooth puree.

Heat oil and butter in a pan on medium heat. Let the butter melt.
Add whole spices (cloves, cardamoms,
cinnamon, bay leaf) and saute for 1minute or until you get a nice aroma of the spices.
Add the prepared puree. - 8
Mix well and cook for 5-7 minutes or until it thickens slightly.now add turmeric powder, Garam masala, coriander powder, mix well and cook it few minutes.

Now add water and salt mix it well and let the gravy simmer for 5 minutes.
Then add fresh cream and Kasuri methi mix it. - 10
Add koftas into the gravy, turn off the
stove and serve malai kofta immediately.

I had made this Palak kofta curry for dinner last night. Koftas turned out really delicious. My son gobbled up a couple of koftas just like that... said they tasted good as is and didn't want to wait until the curry was ready. The spices in the gravy were well balanced. Koftas had a thin crispy covering with soft flavourful center..Flashback⏪, my mom used to make palak kofta curry when I was a little girl. My last attempt at making these koftas was way back in 2001. As a newly-wed I wanted to impress hubby dear.😉 Needless to say, the curry did not turn out the way I had imagined or remembered how it tasted when mom made. Unfortunately, picking up phone & making a call across oceans, every time I attempted something to cook was not an option back then...blame it on time zone difference and high international call rates.😆.Current day⏩, years of experience and confidence in my cooking skills and a zeal for variety in my meals got me to making these palak koftas again.
