Today I have made tasty winter special red carrots poriyal. It's a spicy South Indian dish. Carrots are very good for eyes and highly nutritional. Carrot is cooked in spices then shredded coconut is added to give extra flavour. It goes well as a side dish with rasam dal rice or chapati.

Ingredients

  1. 2carrots finely chopped
  2. 2 tbspoil
  3. 1 tspbangal gram
  4. 1 tspsplit skinless black gram
  5. 1/2 tspmustard seeds
  6. 1/4 tsphing
  7. 2green chillies chopped
  8. 2dry red chilli
  9. 10/12curry leaves
  10. 1/2 tspturmeric powder
  11. as requiredSalt to taste
  12. 1/2 cupfresh shredded coconut

Cooking Instructions

    Heat oil in a kadai add mustard seeds and let them splutter. Now add split skinless black gram, bengal gram, hing, curry leaves and saute for 2-3 minutes.

    Then add chopped carrots, turmeric powder, salt and mix it well, cover and cook for 6-7 minutes.

    Once carrots are cooked then add fresh shredded coconut mix it properly well and cook another 2-3 minutes. Then turn off the flame.

    Carrot Poriyal is ready.
