Ingredients

18-20 mins. Prep Time: 15-20 mins.
2 servings
  1. 2-3Carrots: Small/Medium- Cut Up into small cubes of about 1/2” sized
  2. 12-15French Beans: Cut Up into the similar sizes as that of the Carrots
  3. To Taste Salt
  4. 1 PinchSugar
  5. 1-1.5 CupsWater: RT
  6. 1/4 tspTurmeric
  7. 1/2-1 tspSalt
  8. 1/4 tspTempering Spices: Hing/Asafoetida
  9. 2-3 tbspsCoconut Oil
  10. 1/4 CupFreshly Grated Coconut or Desiccated: Fresh Coconut is highly recommended always
  11. 1 tspChana Dal
  12. 1 tspUrad Dal
  13. 1 tspMustard Seeds
  14. 1/2 tspCumin Seeds: Optional (I’ve used)
  15. 10-12Fresh Curry Leaves
  16. 2Dry Red Chillies: Broken
  17. 1Onion: Finely Chopped
  18. 1 tspFresh Ginger: Finely Chopped
  19. 1 tbspSesame Seeds: Optional (Garnish)
  20. 1/8 CupPeanuts: Gently Toasted- Optional

Cooking Instructions

18-20 mins. Prep Time: 15-20 mins.

    Firstly: Get set ready with all the aforementioned ingredients and keep everything handy for furtherance of the cooking process next-
    Heat up a frying pan over medium flame & add into it a cup of water with some salt & turmeric- Mix it all well together until nicely combined and well blended & reaches the rolling boiling point

    Throw in the chopped measured green beans & carrots to it & let it cook slowly by reducing the flame to medium-low & cover up the pan with its lid- Stirring, occasionally in between & having a close check onto the same, ensuring not to overcook the veggies- We need a perfectly cooked yet firm veggies for this dish

    Next, heat up another pan over the medium flame & add in the measured amount of the coconut/cooking oil- Then, add into it all the aforesaid tempering spices & allow them to splutter & turn aromatic-In the tempering spices- We need to include the Hing, Curry Leaves & the pulses too, to be well sautéed & turn fragrant as well- We can choose to add in some peanuts too in this recipe but that’s completely optional-

    Throw in the finely chopped onions & ginger & continue sautéing until it turns translucent & get aromatic- Time to add in the boiled green beans & carrots, mixing everything nicely well together until they’re all combined together perfectly- Sauté, until the entire moisture from the boiled veggies are absorbed

    Add in the freshly grated coconut to it, mixing it all nicely again- Checkout the seasonings at this point once & adjust accordingly, if the need be so- Once done Turn off the flame & let it sit on the hot oven for another 5-6 mins time before serving it piping hot

    Transfer it to a separate serving bowl or platter now & serve it hot with equally piping hot steamed Rice & Sambar or anything similar of your choice- It’s best had & relished that way, mostly by all- You can definitely take your own call on it
