Carrot Thoran is very simple and healthy dish from Kerala cuisine. It has all the nutrients of carrot and coconut and is extremely delicious.

Steps

Wash and peel the carrots.

Grate them.

Grind all the ingredients to grind. Keep aside.

Heat a pan. Put oil in it.

When the oil is hot put mustard seeds,and curry leaves in it.

Now put the grated carrots mix well.

Add salt, turmeric powder and a pinch of sugar (optional).

Saute,cover it with a lid and cook for 5-6 minutes.

Open the lid. Mix well.

Now add grinded coconut. Mix properly.

Saute for 2 minutes.

Turn off the gas.
