I prepared this veg pulao with the leftover rice. As I was in a hurry, I thought it would be better and easier to have a one pot meal which is definitely a delicious wholesome lunch.

Ingredients

15 minutes
2 servings
  1. 1.5 cupleftover cooked rice
  2. 1/3 cupcauliflower florets
  3. 1/4 cupchopped green bellpaper
  4. 1/2 cupchopped red bellpaper
  5. 3/4 cuppaneer cubes
  6. 1tomato chopped
  7. 1onion sliced
  8. 1/2 cup blanched green peas and sweetcorn
  9. slicesLemon
  10. leavesChopped coriander
  11. Khada garam masala
  12. 1/3 Tspturmeric powder
  13. Salt as required
  14. 1 Tspcoriander powder
  15. 1/2 Tspcumin powder
  16. 1/2 Tsp garam masala powder
  17. 3 Tbspghee
  18. 1 Tbspginger garlic and bairagi red chilli paste
  19. Accomplish with green coriander and chana dal chutney

Cooking Instructions

    Arrange and assemble ingredients.

    Heat ghee and roast whole garam masala in low flame till aromatic. Then add ginger garlic paste and saute till rawness goes well.

    Add chopped onion and roast till translucent. Mix tomatoes, turmeric, salt, coriander powder, cumin powder and garam masala powder. Add some water.

    When ghee separated from masala,add veggies and paneer cubes. Mix well with masala.

    Then mix cooked rice well with veggies. Cook covered on low flame for two minutes, mix lemon juice. Serve with coriander and chana dal chutney.
