Today I have made malpua rabdi for holi festival.
Deep-fried malpuas are sweetened pancakes and serve with rabdi, makes a simple dessert a fabulous treat.
Serve hot malpuas with chilled rabdi. It testes divine.

Ingredients

  1. For Malpua -
  2. 1/2 cupmaida
  3. 1/2 cupmilk powder
  4. 1/2 cupsemolina
  5. 1 cupmilk
  6. 1 tspfunnel seeds
  7. 1 tspcardamom powder
  8. 1 pinchsalt
  9. as requiredOil for deep frying
  10. For syrup -
  11. 2 cupssugar
  12. 1 cupwater
  13. 5-6saffron strands
  14. 5-6 dropsrose essence
  15. For rabdi -
  16. 500 mlfull fat milk
  17. 1/2 cupmilk powder
  18. 8-10saffron strands
  19. 1 tspcardamom powder
  20. 2 tbspfresh bread crumbs
  21. 2 tbspsugar

Cooking Instructions

    Making sugar syrup -
    Take water and sugar in a kadai, keep cooking till it becomes a single string consistency. Add saffron strands and rose essence, mix it well and keep aside.

    Making rabdi - Heat full fat milk in a pan add milk powder, sugar and cook till it little thickens. Now add saffron strands, cardamom powder and bread crumbs mix it properly well and cook on low flame till it is reduced and reaches a thick consistency turn off the flame. Keep aside.

    Take a bowl add maida, semolina, milk powder, salt, mix it well then add gradually milk and mix, using with a whisk. Now and funnel seeds, cardamom powder and mix it properly well. Malpua batter is ready.

    Heat sufficient oil in a kadai pour a ladleful of batter to form a pancake. Cook on low to medium heat, turn it over when it starts to colour slightly. When both sides are done take out.

    Now fried malpua immerse in the warm sugar syrup for 8-10 minutes then drained it and serve.

    Serve malpua with rabdi garnish with dry fruits and cranberry.

    Serve hot Malpuas with chilled Rabdi. It tastes divine.
