  1. 500 gmraw totapuri aam
  2. 2 tbspmustard seeds
  3. 1 tbspfennel seeds
  4. 1 tbspcumin seeds
  5. 1 tbspcoriander seeds
  6. 1 tspblack pepper
  7. 1 tbspmethi
  8. 4dry red chilli
  9. 1 cupmustard oil
  10. 1 cupginger garlic chopped
  11. 4 tbspkashmiri red chilli powder
  12. 1 tbspturmeric powder
  13. 1 tsphing
  14. 1 tspcarrom seeds (ajjwain)
  15. 1 tspnigella seeds (kalonji)
  16. salt to taste

    Wash raw totapuri aam properly, peel them, cut in long thin slices.

    Heat a pan add mustard seeds, fennel seeds, cumin seeds, methi, black pepper, coriander seeds, dry roast for few seconds on low flame. Add dry red chilli again roast for few seconds. Transfer in a plate, keep aside, let it cool.

    After cool down completely transfer in a grinder, make coarse powder. Do not make fine powder. Achaar masala is ready.

    Take a deep bowl add chopped ginger, chopped garlic, kashmiri red chilli powder, hing, turmeric powder, carrom seeds, nigella seeds, salt as per taste, mix well.

    Heat mustard oil on high flame, pour hot mustard oil in bowl, immediately mix it, cover the plate & keep aside for 2 minutes.(so ginger, garlic cooked in the hotness of oil)

    After that add mango slices, mix well. Add prepared achaar masala, mix properly, add prepared achaar masala, mix properly till all mango slices coated with prepared masala. Cover the plate & rest it for 3 to 4 hours.

    After 4 hours Instant Aam Achaar is ready, you can store it in freeze for 1 month. Enjoy with Roti, Parantha.
