Ingredients

  1. 1 cupwheat flour
  2. 1/2 cupall-purpose flour
  3. 1/5 cupsemolina
  4. 1/2 cupghee (clarified butter)
  5. 1/4 cupsugar
  6. 2 tbspdesiccated coconut
  7. 1 tspcardamom powder
  8. 1 tspfennel seeds
  9. Water for kneading dough
  10. Oil for frying

    Firstly, in a mixing bowl add wheat flour and all-purpose flour.

    Now, add cardamom powder, fennel seeds, dessicated coconut and mix well.

    Further, add ghee. crumble and mix well making sure the dough holds shape.

    Now, add sugar and again mix everything very well.

    Knead to smooth and tight dough adding water as required.

    Now shape to a triangle and mark leaves using a toothpick or spoon.

    Fry in hot oil by dropping gently. Flip over gently as they will be very soft.

    Fry for 15 minutes or until both sides turns golden brown.

    Drain off and cool completely. thekua will be soft when hot, it turns crisp once cooled completely.

    Finally, enjoy thekua with cup of tea.
