Ingredients

  1. 1 1/2 cupsboiled lobia
  2. 1/2 cupsliced onions
  3. 1 cupdiced bell peppers
  4. 1/2 cupdiced cucumbers
  5. 1/2 cupdiced zucchini
  6. 1/2 cupcherry tomatoes halved
  7. 1/2 cupsliced spring onions
  8. 1/2 cupchopped parsley
  9. For the dressing
  10. 2 tbspbalsamic vinegar
  11. 2 tbsplemon juice
  12. 3 clovesgarlic finely chopped
  13. 1/2 tspsalt or to taste
  14. 1/4 tspcrushed black pepper
  15. 1 tbspolive oil

Cooking Instructions

    To begin, prepare the dressing. In a bowl, mix together balsamic vinegar, lemon juice, garlic, salt, crushed black pepper, and olive oil. Mix well and keep aside.

    In a larger bowl, add boiled lobia, sliced onions, diced capsicum, cucumbers and zucchini, halved cherry tomatoes, and sliced spring onions. Mix well.

    Add the dressing you prepared earlier. Toss until well coated.

    Add the chopped parsley and toss. Check the salt and add more if required.

    Refrigerate for at least an hour so that the lobia and vegetables soak in the flavors. The Boiled Lobia Salad with Lemon Balsamic Dressing is ready to enjoy.
