Easy Pancakes

Easy breakfast recipe specially when we are on a rush. It can be modified to everyone's taste by adding some fruits. My kids love plain pancakes or chocolate chip, I like some fruit in mine. I make the batter and add the fruits like blueberries, strawberries or bananas that we always have at our home.

I have used All purpose flour for my recipe but this can be substituted with wheat flour. My friend mentioned she adds some protein powder when mixing the batter keeping the ratio of the dry ingredients to the wet ones. You can also reduce the sugar or use brown sugar and add some oats, flax seeds, nuts or lemon zest. With pancakes the opportunities are endless.

Ingredients

  1. 1.5 cupsall purpose flour
  2. 2 tbspSugar
  3. 3/4 tbsp baking powder
  4. to taste salt
  5. 1.5 cups milk
  6. 1 large egg
  7. as neededtbsp- butter (melted)
  8. 1 tspvanilla essence

Cooking Instructions

    Whisk together the dry ingredients until they are mixed properly.

    Whisk together milk, egg, melted butter and vanilla essence until combined well.

    Mix both the dry and wet ingredients untill you get a smooth batter without any lumps.

    Heat the skillet and once it's hot, pour a ladle of the batter onto it. IF you are planning to add berries, bananas, nuts or chocolate chips it can be incorporated into the batter before pouring or added to the pancakes at this stage after pouring them to the skillet. (Sometimes I use chocolate chips to make smiley face pancakes for my son.)

    When the edges look dry and bubbles start to appear, flip the pancake over and cook for another 2 mins.

    Serve them with your favorite syrup.
