Carrot Laddu

#bandhan - Halwas & Burfis are usually made out of carrots. But today I decided to make some Carrot Laddus, garnished with chopped nuts. They are very easy and simple to make and can be served during festivals or after meal desserts. I added some brown sugar and dessicated coconut along with fresh coconut.

They are very easy and simple to make and can be served during festivals or after meal desserts. I added some brown sugar and dessicated coconut along with fresh coconut.
Cooking Instructions

Heat ghee in a pan and saute the carrots for 2 minutes. Add the sugar, desiccated coconut, cardamom powder and fresh coconut.

Stir fry on a low flame till combined well and starts to thicken. Add the chopped nuts (leaving some to garnish) and rose water. Mix well and switch off the flame.

Transfer to a plate and allow it to cool down a bit. Apply some ghee on your palm and form into small balls. Garnish with the remaining nuts and chill to serve.

#post15 - This is a traditional Egyptian dessert that is very popular in all Middle Eastern countries, especially during Ramadan. It is made of puff pastry / croissant and is almost similar to bread pudding, but without any eggs. It is very simple to prepare where all you need is to pour thickened milk over some shredded croissant, followed by some cream, coconut and chopped nuts. It is then baked till done. Can be enjoyed hot or cold. I prefer the latter one.
