Ingredients

  1. For the bread:
  2. 1 - 1/2 cup fresh strawberries
  3. 1/4 cupvegetable oil
  4. 3 teaspoonsvanilla essence
  5. 3/4 cupgranulated sugar
  6. 1/4 cupbrown sugar
  7. 2 cupsall purpose flour
  8. 1egg
  9. 1 teaspoonbaking soda
  10. 1/2 teaspoonsalt
  11. 1 cupbuttermilk
  12. 1/4 teaspooncinnamon powder
  13. For the glaze:
  14. 1 tablespoonmelted butter
  15. 1/2 cupconfectioners sugar
  16. 2 teaspoonsvanilla essence
  17. 2 teaspoonsmilk

Cooking Instructions

    Preheat the oven to 180 degree Celsius. Line butter paper throughout or spray some oil along a loaf pan.

    In a bowl, add the sifted flour, baking soda, salt and cinnamon. In another separate bowl, whisk the egg and both the sugars until they are combined. Now whisk in the buttermilk, oil and vanilla essence.

    Pour the dry ingredients into the wet ingredients and whisk until there are no lumps. Overmixing will result in the bread being very hard so make sure to not over mix.

    The strawberries are washed, dried and cut into pieces and tossed in a little bit of flour.These strawberries are folded in our bread batter.

    Bake the bread for 50 mins to an hour. Poke in a toothpick to check if the bread is done or not.

    Let the bread cool down to add the glaze. The glaze is made by melting the butter in a bowl. Then adding the confectioners sugar and vanilla, we whisk it until combined. Add the milk so that the glaze isn't very thick and is in a running consistency.

    Pour the glaze over the bread and slice it. Your yummy strawberry bread is now ready
