材料

4 servings
  1. spinach (washed) 2 bunches (400 g)
  2. kosher salt one generous pinch
  3. shallot (finely minced) 1 small (2 tablespoons)
  4. tuna can 1
  5. For the dressing:
  6. avocado oil 3 tablespoons
  7. lemon juice 1 tablespoon
  8. white wine vinegar 1 teaspoon
  9. sea salt 1/8 teaspoon or more to taste
  10. freshly ground black pepper 1/8 teaspoon or more to taste

作り方

    Before blanching, rinse the spinach well.

  2. 2

    In a large pot, bring water to a boil, then add salt.

  3. 3

    Add one bunch of spinach and blanch for 30 seconds.

  4. 4

    Transfer cooked spinach to a colander. Repeat once more.

  5. 5

    Run cool water over the spinach until cool to touch.

  6. 6

    Use your hands to squeeze out extra moisture from spinach.

  7. 7

    In a large bowl, whisk in all dressing ingredients.

  8. 8

    Stir shallots/tuna/ an inch long piece of chopped spinach.

  9. 9

    Toss well then serve!

コツ・ポイント

Since this is tossed with a citrus vinaigrette, its better to finish within 3 days before changing the flavor!
