材料

4-5 servings
  1. baby broccoli 2 packs (400 g)
  2. water 1/3 cup
  3. kosher salt one generous pinch
  4. shallot (thinly sliced) 1 medium
  5. kalamata olives (sliced halves) 1/3 cup
  6. For the dressing:
  7. extra virgin olive oil 3 tablespoons
  8. red wine vinegar 1/2 tablespoon
  9. dried oregano 1/4 teaspoon
  10. sea salt 1/4 teaspoon or more to taste
  11. freshly ground black pepper 1/8 teaspoon or more to taste
  12. freshly grated parmigiano reggiano 1/3 cup

    Rinse the broccoli thoroughly before cooking.

    Place the broccoli and water in a large skillet.

  3. 3

    Sprinkle it with salt, then cover and cook over medium heat.

  4. 4

    Cook until the broccoli gets bright green.

  5. 5

    Transfer cooked broccoli to a colander, then drain well.

    Leave it until cool enough to handle.

    Cut the broccoli into 2" long pieces.

    In a large bowl, whisk in the dressing ingredients. Mix well

    Add broccoli, shallots, olives and cheese in the bowl.

    Toss well and taste, adjust with salt and pepper as needed.

    Serve.

コツ・ポイント

Cook with different sizes of broccoli, and use a pan to steam it instead of blanching it. But either way works too!
