My Korean friend taught me her recipe! Kimchi can be also used for kimchi jjigae, fried rice and gyoza.
作り方

Cut the cabbage lengthwise through the stem into quarters.

Cut each quarter crosswise into 2-inch-wide strips.

Place the cabbage in a large bowl and sprinkle with salt.

Mix them together with your hands and let sit for 2 hours.

Flip the cabbage over every 30 mins.

(Option) Slice an onion.

Cut a carrot into julienned strips.

Chop 20 chives into 1-1.5 inch (3 cm) pieces.

Prep the paste by adding the ★ to a food processor and mix.

After 2 hrs, rinse the cabbage 3 times to remove the salt.

Gently squeeze any remaining water and transfer to a bowl.

Add carrots, onions, chives and "half" of the chili paste.

Use gloves* and mix well to coat the vegetables evenly.

Add more paste to your preferred taste and spiciness.

Sprinkle some sesame for garnish.
コツ・ポイント
*Use disposable gloves to mix as the chili paste can irritate sensitive skin.
