Place the shrimp on the cutting board.

Make slits along the underside of the abdomen.

Place the shrimp belly side down.

Press the shrimp onto a cutting board with your fingers.

Flatten it out into a straight line. Repeat for the rest.

Place the shrimp and season with salt, pepper, and garlic.

Leave for 10 mins and use a paper towel to remove moisture.

Set up the panko breading station.

Dredge the shrimp with flour.

Dip the shrimp in the egg.

Place the shrimp in the panko and cover it.

Press the panko lightly on the shrimp to stick it well.

Heat the oil to 350 F.

Set the wire rack lined with paper towels underneath.

Put 2-3 shrimps in oil and deep fry.

NOTE: To maintain the temperature, don't put the shrimp →

in more than 2 or 3 at a time.

Deep fry the shrimp for 2-3 mins or until golden brown.

Transfer the shrimp onto the wire rack to remove excess oil.

Scoop up the panko to keep the oil clean as needed.

Serve up with home made tartar sauce!
コツ・ポイント
Sprinkle salt over the shrimp and leave it for 10 mins to remove extra moisture from the shrimp and make it firm.
