I learned that you can make Nikujaga without dashi. I think this has a more umami concentrated and savory flavor :-)
作り方

Oil in a Dutch oven (3 1/2 qt) over medium heat.

Stir in meat and cook until no longer pink.

Add potato/onion/carrot. Stir and cook to coat the veggies.

Add sugar/sake/mirin/soy sauce and stir to coat with sauce.

Bring it to a simmer, then cover and cook. Stir at times.

Cook for 20 mins or until a skewer pierces a potato easily.

Remove from the heat, and add snow peas and cover.

Once peas are heated through, serve.
コツ・ポイント
A typical recipe for Nikujaga use dashi as the soup base, but you can get enough broth from the veggies/seasoning!
