If you find a fresh octopus at the fish market, it's time to cook your own recipe. You can enjoy the meaty and tasty texture every single bite if you know the proper preparation. There is no crazy trick to achieve a tender texture, the key is proper cooking time :-)

My octopus was 2.06 lb this time.

NOTE: My octopus was already clean by the fish market staff,

but I do thoroughly clean it once more.

Place the octopus and salt in a large bowl.

Scrub the salt all over the octopus (inside/outside head).

NOTE: Salt helps remove slime/impurities from the surface.

Rinse the octopus under the cold water to remove the salt.

NOTE: Repeat step 4 & 6 as needed.

For the blanch:

Fill a large pot big enough to submerge the octopus in water

Bring water to a boil, add lemon juice and salt.

Hold the octopus by its head, dip the tentacles briefly.

Then immediately remove it, repeat 2 more time/until it curl

After the tentacles curl, fully submerge it into the water.

Cook for 3-5 minutes.

Turn off the heat, and leave it for 5 minutes.

Flip the octopus and leave it for another 5 minutes.

Drain well. Let it cool until ready to use.
