材料

4 servings
  1. soft or medium firm tofu (cut into cubes) 1 pack (14 oz)
  2. beyond beef 1/2 pack
  3. garlic (minced) 1 clove
  4. ginger (minced) 2 teaspoons
  5. scallions (finely chopped) 2-3
  6. canola oil 2 tablespoons
  7. for the sauce mix:
  8. fermented black bean sauce (豆豉醬) 1 tablespoon
  9. sweet bean sauce (甜麺醤) 1/2 tablespoon
  10. bean paste (豆板醤) 1 teaspoon
  11. for the broth mix:
  12. water 200 ml
  13. sake 2 tablespoons
  14. Chinese light soy sauce 1 tablespoon
  15. Chinese dark soy sauce 1 tablespoon
  16. chicken bouillon powder 1 teaspoon
  17. cane sugar 1 teaspoon
  18. kosher salt to taste
  19. ground white pepper to taste
  20. toasted sesame oil 2 teaspoons
  21. potato starch 1 tablespoon
  22. water 2 tablespoons

作り方

  1. 1

    Combine potato starch and water in a bowl. Set aside.

  2. 2

    Combine all the broth seasoning in a measuring cup.

  3. 3

    Oil in a wok over medium high heat. Add garlic/ginger.

  4. 4

    Cook until garlic gets fragrant.

    Add beyond beef, crumbling the beef up into small chunks.

    Add all the bean sauce mix and stir thoroughly.

  7. 7

    Add the broth mix and bring it to a simmer. Add tofu.

  8. 8

    Cook until heated through. Add starch mix. Bring to a boil.

  9. 9

    Cook until the sauce thickens. Taste, add salt as needed.

  10. 10

    Add white pepper, scallions, and oil, then stir once more.

  11. 11

    Serve.

コツ・ポイント

Add sugar to create contrast within the savory flavor.
