Place the bacon in a large Dutch oven.

Cook over medium heat until crisp.

NOTE: We use fat for cooking oil (about 2 tablespoons)

Add onion, pepper and garlic, and cook for 5 minutes.

Add beef, break it up and cook until meat gets brown.

Add tomato paste, cook and stir for 2 minutes.

Add chili/cumin/paprika/mustard/sugar and cook for 2 mins.

Add all the rest of the ingredients and stir to combine.

Bring to a boil, and reduce to a simmer.

Uncover and cook for 30-60 mins, stirring occasionally.

NOTE: Cook until the chili reaches your desired thickness.

Taste, adjust with salt and pepper as needed.

Serve with your choice of topping on top of the chili.
