Porky Scrambled Tofu

Scrambled tofu (Iridofu in Japanese) is a home style savory dish. The main protein is tofu and it's cooked along with some vegetables. I cook scrambled tofu quite often, and this recipe geared towards western style seasoning with bacon. Bacon makes everything BETTER :-)

Scrambled tofu (Iridofu in Japanese) is a home style savory dish. The main protein is tofu and it's cooked along with some vegetables. I cook scrambled tofu quite often, and this recipe geared towards western style seasoning with bacon. Bacon makes everything BETTER :-)

Put a paper towel in a microwave safe container, place tofu.

Cover with a paper towel and nuke for 2 minutes at 600W.

Place bacon in a large skillet, cook over medium high heat.

Cook, and stir sometimes until lightly brown.

Remove extra fat with a paper towel before adding oil.

NOTE: I left some fat for flavor, but removed most of it.

Add oil, bell pepper and mixed vegetables. Cook for 1 min

Add tofu and break it into bite sized pieces and cook.

Stir occasionally to help evaporate excess moisture.

Add soy sauce, chicken bouillon, and salt.

Stir and cook until evenly combined.

Taste, adjust with salt as needed. Serve.
コツ・ポイント
After rendering the bacon fat, remove most of the fat but use some of it as part of the seasoning.
