Mentsuyu

Mentsuyu or Tsuyu is a Japanese soup base used as a dipping sauce for cold noodle dishes (like soba, udon, somen and tempura) or as the foundation of a noodle soup. This recipe isn't as concentrated as the base recipe, so you don't need to dilute it with a water when you use it as a dipping sauce for cold noodles.

Add water and kombu in a small pot and leave it 30 minutes.

Heat to medium low and bring it to about a boil.

Remove the kombu from the pot.

Add bonito flakes and let it simmer for 5 minutes.

Set a strainer over the heatproof bowl, pour broth over it.

NOTE: Use a spoon to squeeze out dashi from the bonito well.

Transfer the dashi into a pot, add soy sauce and mirin.

Heat to medium and bring to a boil, and turn off the heat.

Let it cool completely.

Store in an air tight container in a fridge.
