Easy Chickpea Curry

Japanese curry rice is a favorite meal in Japan, and Japanese curry roux mix is a pantry friendly ingredient that makes curry easy. This recipe idea came up after a long trip without almost no veggies in our diet, so it uses chickpeas and other vegetables over meat for a homely feeling within the dish :-)
Easy Chickpea Curry

Oil in a Dutch oven (2 US qt) over medium heat.

Add cumin seeds and cook until fragrant.

Add onions and garlic, and cook until onions are translucent

Add bell pepper and cook for 1-2 minutes.

Add chickpeas and water, and bring it to a simmer.

NOTE: Scoop scum on the surface off and discard.

Heat to medium low, cover and cook for 5 minutes.

Turn off the heat. Add curry roux cubes.

Stir and mix well until the roux has dissolved.

Add garam masala and stir to combine.

Bring to a simmer, heat to medium low, uncover and cook.

Stir and cook for 5-10 mins until curry becomes thick. Serve
コツ・ポイント
You can add some extra veggies such as spinach, Swiss chard, Kale, or fresh herbs such as cilantro.
