These filling muffins are great for afternoon tea. Got the original recipe from allrecipes.com. posted by Shelley Albeluhn. I tweaked it by replacing a cup of all purpose flour with whole wheat flour also added the raisins and multi grain toppings, and dialled down the sugar from 3/4 cup to 1/2 a cup.

Ingredients

makes 12 servin
  1. 1 cupself rising wheat flour
  2. 1 cupwhole wheat flour
  3. 1 tspbaking soda
  4. 1/4 tspsalt
  5. 1/2 cupprestige margarine
  6. 1/2 cupbrown sugar
  7. 2eggs beaten
  8. 2 1/3 cupsmashed overripe bananas
  9. 1/4 cupraisins
  10. Topping
  11. 1 tbspchia seeds
  12. 2 tbspsunflower seeds
  13. 2 tbspoats

Cooking Instructions

  1. 1

    Sieve flour three times to get it airy, add baking soda and salt

  2. 2

    Prepare baking tray by lining the cup cake tray with paper cupcake holders

  3. 3

    In a separate bowl cream together butter and brown sugar.

    Stir in beaten eggs and mashed bananas until well blended into a thick batter

  5. 5

    Dust the raisins with some flour and throw them into the batter

  6. 6

    Sprinkle the toppings on the cup cakes

  7. 7

    Bake for 30 mins in oven at 175 degrees. Let cool for 10 mins. Remove from cup cake tray and let cool on rack covered with a clean kitchen cloth.

    Serve with tea

I have made these muffins three different ways. In one recipe I added the zest of one orange, grated. In another I added poppy seeds instead of raisins and I'm another I put in 1 tsp of ground cinnamon.
