Sweet & Salty Pork and Shimeji Mushrooms

I came up with this recipe for my husband who likes richly flavored meals.
My husband has a really busy job and rarely gets time to eat 3 meals a day, so I wanted to make him something filling that could be topped on rice and made in a short time.
After the liquid has evaporated, the meat will become tough, so don't take your eyes off the pot. Once the liquid lessens, remove from the heat. If you don't have shimeji mushrooms, onion will also taste delicious.
If you like spicy foods, you can add a little bit of doubanjiang or sprinkle with cayenne pepper powder at the end to make it taste even better. Recipe by Chibibou mama

Cooking Instructions
- 1
Remove the base from the shimeji mushrooms and shred them apart. Add all of the ★ ingredients to a small pot and heat.
- 2
Once boiling, add the pork and shimeji. Lower the heat down to low-medium, cover with a lid, and simmer until the liquid evaporates.
- 3
Sprinkle with white sesame seeds to finish. If you put it on rice to make a rice bowl, it will be really tasty, so please try that too.
- 4
If you want to make a lot, it will taste best if you double the seasoning ingredients. Use 300 g of meat, 1 pack of shimeji, and 1 onion.

It is a sure hit menu of my family. If you keep the meat macerated for too long or if you rub it in, the taste will be too strong so be careful. Even if you're using cheap cuts of meat, the sauce will make this an exceptional dish. If you omit the ginger and pork, you'll have a regular pork rice bowl. Adding ginger and garlic makes a gingered pork rice bowl.Only use a thin coat of flour but don't omit it as it's vital for getting the sauce to stick to the meat.If you only have a little meat, add onion slices to bulk the dish.If you cut the amount of sauce in half, you can make regular gingered pork. Sweet & Savory Shiitake Mushroom, Green Pepper, and Pork Belly Stir-fry Sweet & Savory Shiitake Mushroom, Green Pepper, and Pork Belly Stir-fry
This recipe originated from the "Sweet & Salty Green Pepper Stir-fry" recipe which I used to make for my children's lunch all the time. Then one day, I thought that they didn't have enough meat in their lunch, so I added pork belly and the flavor became so much better! Then I decided to add shiitake mushrooms in order to increase the volume and the nutrition content, and because they go well with a sweet & savory stir-fry.Steps 3-4: As the liquid decreases, it may start to burn, so adjust the heat accordingly.Rather than waiting until the liquid evaporates completely, it's best to stop the heat once it becomes slightly thickened.I use an induction stove top.
