Picadillo Balls

This is a spin on Cuban Potato Balls the granddaughters I am watching one doesn't like cooked olives so you can add olive if you like for myself the olives are in!!! I use meatballs because they are already premade and smoked. When I do these I use frozen ones when I made before. My granddaughters love meatballs so I make them often in large quantities and freeze so I can save some time.

Cooking Instructions

In a heat resistant bowl add hot water, honey, sugar, yeast, salt, and oil. Gently whisk and allow to bloom. Add spices and salt to the flour in another bowl. After it blooms add the yeast to the flour and mix. Knead for 7 minutes.

Form a ball put into an olive oil coated bowl. Set in a very warm place and allow to rise for 1 hour. Punch and set back into a warm place to rise again.

Dice the meatballs and potatoes. Cook together. The meatballs are already cooked see my about this recipe above. Sautè in olive oil.

Add the capers, raisins, spices, and bay leaves.

Add the water, stir, and cover allow to cook for 8 minutes. Get the laughing cow and tomato paste ready by peeling off the foil. Add in the tomato sauce.

Add the cheeses and tomato paste. Stir and adjust seasoning. Allow filling to cool.

Take a third of dough. And make 12 even sized parts. When cooled take a pice of dough and make it flat with a pocket in the middle.

Add 1/2 tablespoon of filling close dough and make a ball. Put into pan. Put into oven for 20-25 minutes.

Allow to rest 8 minutes and serve, I hope you enjoy!!
