Ingredients

45 minutes
Serves 4 servings
  • 1/2 cuptomato sauce (120 ml)
  • 1 tablespoonvegetable oil (15 ml)
  • 1.1 poundsground beef (500 grams)
  • 1small onion, diced
  • 2 clovesgarlic, finely chopped
  • 1celery stalk, diced
  • 1carrot, diced
  • 1/2red bell pepper, diced
  • 1/2yellow or green bell pepper, diced
  • 1yellow sweet potato, peeled and diced
  • 1/2 cupcooked green peas (75 grams)
  • 1/2 teaspoonground cumin (1.5 grams)
  • 1 teaspoonchopped chili pepper (2 grams)
  • 1/2 tablespoonpaprika (4 grams)
  • 2 teaspoonschopped parsley (4 grams)
  • 1 teaspoonfresh oregano, chopped (1 gram)
  • 1 teaspoonfresh thyme, chopped (1 gram)
  • 1/4 cupwater (60 ml)
  • 2 teaspoonssalt (10 grams)
  • 20olives
  • 1 tablespooncapers (10 grams)

Steps

45 minutes
  1. 1

    Heat a skillet with the oil and sauté the onion and garlic. Add the ground beef and cook, stirring occasionally, until browned.

  2. 2

    Add the cumin, chopped chili pepper, paprika, parsley, oregano, and thyme. Cook for a few minutes.

  3. 3

    Add the water and the rest of the vegetables. Cook until the vegetables are just tender.

  4. 4

    Add the olives, capers, and tomato sauce. Mix well, heat for a few minutes, and serve with rice. In the photo, I served it with brown jasmine rice.
