Cooking Instructions
- 1
Here's a sardine before it's butterflied.
- 2
Cut off the head.
- 3
Cut (at an angle) the bottom portion of the the fish from the belly to the head (see the diagram in Step 10). Then slice the bottom of the fish all the way across.
- 4
Using your thumb, open up the belly starting near the head and move toward the tail.
- 5
Use both hands to remove the spine with your thumb and index finger (I could only use one hand in the photo), starting at the head and moving toward the tail.
- 6
After removing the spine up to the tail...
- 7
Break it off with your hands.
- 8
If the skin near the head of the fish bothers you, cut it off to round out the shape.
- 9
Rinse under water, then blot away the excess moisture.
- 10
The drawing shows where to cut the fish in Step 3.

Homemade Oil Sardines Homemade Oil Sardines
I was told how to make this from a shop that always has delicious homemade oil sardines. These also taste good if you add thyme or basil. Add your favorite herbs and adjust the amount of garlic, chili pepper, and pepper to your tastes. Olive oil is kind of strong, so you can use soybean oil or vegetable oil if you prefer. You can also add the oil from this recipe to pasta or salad, or even stir-fries. They will store in the refrigerator for 1 month, but please try to eat them quickly. Store in the freezer. A long time ago the supermarket used to sell these sardines cheaply and I'd make this recipe. But recently they don't sell them as much so it's been a long time since I've made this.Don't use herring sardines. They're easier to eat and taste better when covered in lots of sauce.Since the portions of the sauce ingredients are all the same, you can easily adjust the amount of sauce needed. I tried a fish dish.Once you put the sardines in the pot, do not touch the fish often, just pour the cooking liquid over using a ladle or a spoon. Cook without a lid. The sardines are fresh if you can see around 7 dots clearly in a single horizontal line on the body. Recipe by Manmarumauchan cookpad.japan
