Ingredients

  1. 150 gmsStringbeans
  2. 2medium potatoes
  3. 3 tbspmustard oil or refined oil of choice
  4. 1medium onion chopped
  5. 1/2 tspgarlic paste
  6. 1/4 tspturmeric powder
  7. 1/4 tspred chilli powder
  8. 1/4 tspcumin seeds
  9. 1/2 tspsalt or as needed
  10. 1/2 tspsugar
  11. 1/2 tspchaat masala
  12. 1 tbspcoriander chopped finely

Cooking Instructions

    Wash and trim both ends of stringbeans.Then cut them into 1 inch pieces.Peel the potatoes and cut them into small cubes.Finely chop the onion.Boil the potatoes for 5 minutes till partially cooked.Strain water and set aside.Heat mustard oil in a pan until smoky.Temper it with cumin seeds and let it sizzle. Add the chopped onion and fry till light brown. Add the steamed potatoes and saute for 2-3 minutes on medium heat.Add the stringbeans and stir fry for 2-3 minutes.

    Add turmeric and red chilli powder.Add garlic paste, salt and sugar to taste. Saute 2 minutes and add 1/4 cup water.Adjust water till beans and potatoes are tender.Dry up water.Stir fry for a minute. Sprinkle chaat masala and garnish with chopped coriander. Toss to mix well.Serve hot as a side with dal, roti or rice for a wholesome meal.
