Long Beans Stir Fry/ Payaru Poriyal/ Payar Mezhukkupuratti Long Beans Stir Fry/ Payaru Poriyal/ Payar Mezhukkupuratti
An easy to make veggie stir fry, South Indian side dish…One of the side dishes that’s commonly served with South Indian lunch is a vegetarian stir fry in which any kind of veggies can be added. It can be either thoran or mezhukkupuratti. Only one kind of veggie is added or a combination of veggies are added. Thoran and mezhukkupuratti belong to the same category with slight variations. Usually, while making thoran grated coconut which is ground along with some seasonings is added to the veggies. While in mezhukkupuratti grated coconut is directly added to the veggies and is stir fried.Veggies like carrot, beans, beet root, cauliflower, cabbage can be used for making mezhukkupuratti. However, I like long beans mezhukkupuratti better than any other veggies. So, whenever I buy long beans, I make this stir fry. This goes well as a side dish along with rice or chapati. Coconut Zenzai with Kabocha Shiratama Coconut Zenzai with Kabocha Shiratama
Kabocha and walnuts are my favorite autumn flavors. I remembered a red bean soup I had in a restaurant that combined adzuki and milk and thought it would go well with kabocha and coconut milk, so I came up with this simple dessert. The kabocha may or may not have a lot of moisture, so add as much water as necessary at Step 2. For 2-3 servings. Recipe by Usagi no Cima cookpad.japan -
Cinnamon pancakes on coconut whey Cinnamon pancakes on coconut whey
These pancakes are vegan, no sugar, no eggs.I use coconut whey because I make homemade coconut yogurt and just don’t want to throw out the whey left after the yogurt is done. If you are not strict vegan or you can not find coconut whey just use regular milk whey. You can also make it gluten free by replacing whole wheat flour with almond or buckwheat one. It’s even better because on whole wheat the pancakes are not that lush👌 Irina Arte -
